Equipment

  • 1 Grater. for grating the coconut

Ingredients

  • 4 whole medium-sized mature coconuts Use fully mature coconuts for maximum flavor and crunch. Scrape off the brown back completely for a clean white coconut.
  • 4 tablespoons honey Adds natural sweetness and helps the coconut flakes crisp up. You can substitute with maple syrup or agave if preferred.
  • 1 teaspoon salt Enhances flavor and balances the sweetness. You can adjust to taste.
  • 2 tablespoons water Helps dissolve the honey and evenly coat the coconut flakes while cooking. Use just enough to prevent burning.

Instructions

  • Step 1: Prepare and Clean the Coconut: First, break open the coconuts and remove the flesh. Then, carefully scrape off the brownish back to reveal the clean white coconut. After that, wash thoroughly under running water about 3–4 times to ensure it is completely clean.

  • Step 4: Cook, Stir, and Cool: Finally, keep stirring continuously and allow it to stay on heat for about 15 minutes. As the moisture evaporates, it dries and becomes crunchy. Once it turns slightly golden, remove from heat and allow it to cool completely. The flakes will become even crispier as they cool. Store in an airtight container.
