How to Roast Groundnuts (Peanuts) at Home.

Groundnut selection tip: Always start with fresh dry raw groundnuts; avoid any that appear moldy, discolored or smell off. Fresh quality groundnuts make all the difference in your final roasted flavor.
Washing tip:
Always wash your peeled groundnuts before roasting; washing removes dust and debris and helps the salt solution stick more effectively to every nut.
Salt soak tip:
Soaking in salt solution for 5-7 minutes rather than sprinkling salt directly produces a more even mild saltiness throughout every single groundnut rather than uneven salty patches.
Draining tip: Drain as much moisture as possible before placing on your baking tray; excess water creates steam in the oven which prevents proper roasting and crispiness.
Spacing tip: Spread groundnuts in a single even layer with enough space between them; overcrowding the tray causes uneven roasting and steaming rather than proper dry roasting.
Oven tip: Every oven heats differently; keep a close eye from the 8 minute mark and stir once or twice during roasting for even golden color. The familiar roasted aroma is your best signal they are almost done.
Skin removal tip: Allow groundnuts to cool for 3-5 minutes before rubbing between your palms to remove the husk; rubbing while too hot is uncomfortable and rubbing completely cold nuts makes skin removal harder.
Storage tip: Store completely cooled roasted groundnuts in an airtight container at room temperature for up to 2 weeks. Ensure fully cooled before storing to prevent moisture and sogginess.
Serving suggestion: Perfect as a standalone snack, paired with zobo drink, palm wine or Nigerian pepper soup for an authentic traditional Nigerian snacking experience.

Equipment

  • 1 Mini electric oven. For baking the peanuts

Ingredients

  • 1 cup dry groundnuts Start with fresh dry raw groundnuts in their shells; avoid any that appear moldy, discolored or smell stale. Fresh quality groundnuts produce the best roasted flavor and crunch.
  • 1 tablespoon salt Dissolve salt in hot water before soaking rather than sprinkling directly; this produces an even mild saltiness throughout every single groundnut rather than uneven salty patches.
  • 2 cups hot water. Use clean fresh water for washing and hot water for your salt solution; the salt dissolves more effectively in hot water ensuring better flavor absorption.

Instructions

  • Step 1: Get Your Groundnuts: Firstly, start with dry groundnuts in their shells. These are the raw, unroasted type you can easily find in local markets or grocery stores. Make sure they’re not moldy or discolored — fresh nuts make the best result. Once you have them, peel off the shells to reveal the nuts inside. You should have about one cup of groundnuts after peeling.

  • Step 2: Wash the Groundnuts: Next, even though they look clean, it’s important to wash your peeled groundnuts with normal water to remove any dust or debris. This also helps the salt stick better later on. Therefore, pour the groundnuts into a bowl, add clean water, and give them a gentle wash. Rinse once or twice, then drain the water.

  • Step 3: Salt Soak the Groundnuts: To give your roasted groundnuts a mild salty taste, dissolve one tablespoon of salt in one cup of hot water. After that, pour the salt solution over the washed groundnuts and allow it to sit for about 5–7 minutes. Sieve and Drain: After soaking, pour the groundnuts into a sieve to remove the excess water. Shake gently to drain out as much moisture as possible.

  • Step 4: Arrange on a Baking Tray: Once roasted to your desired level (light or deep golden brown), remove the tray from the oven. Allow them to cool for about 3–5 minutes. Then, gently rub them between your palms or with a clean cloth to remove the soft brown outer skin (also known as the husk). Finally, after removing the skins, your roasted groundnuts are ready to enjoy. Next, spread the groundnuts evenly on your baking tray. Don’t overcrowd them — they should have enough space to roast evenly.

  • Step 5: Roast in the Mini Electric Oven: Now it’s time to roast! First, preheat your mini electric oven for about 2–3 minutes on medium heat (around 160 °C / 320 °F). Then, place the tray inside the oven and roast the groundnuts for about 10 minutes. Meanwhile, keep an eye on them — every oven heats differently. You can stir them once or twice during roasting to ensure even color and prevent burning. You’ll notice the nuts start turning light brown and giving off that familiar roasted aroma. That’s your cue that they’re almost done.

Then, gently rub them between your palms or with a clean cloth to remove the soft brown outer skin (also known as the husk). Finally, after removing the skins, your roasted groundnuts are ready to enjoy.
